At least your team name examples are a bit harder to put into mascot form (what the heck does a Crimson Tide look like?) What I've never understood is that our AA baseball team is called the Winnipeg Goldeyes. Fair enough, decent team name, reflects not only our history (it was the name of our mid-twentieth century pro team) but our environment as well (a Winnipeg goldeye is a fish that is here in abundance, and is supposed to be quite tasty). One would think that our mascot would be a fish of some kind, but you'd be wrong. Instead we have a ... thing ... that looks more like the Capital City Goofball (if you remember from the Simpsons) than anything else, called Goldie. You can easily find pictures of him on the team website.

From what I remember, the ram first started sometime in the 1920s, when they wanted to have an animal mascot at the football games and there was a player whose nickname was "battering ram."

You had to ask... I used to live near Glencoe High School in the Portland OR area... That's the home of the Glencoe Crimson Tide, and
here's their mascot, known locally as "The Tide Guy"
