According to issue #4 of the Quantum Leap comic book, Dr. Sam Beckett was a 5-day Jeopardy champ. That story was written by legendary Jeopardy writer Steven Dorfman.

It's been a long time since I read the full story, but I do believe that Al helping with answers plays into things.
And to keep things on topic, I hear the new, January 2021 issue of Games World of Puzzles has a story in it about Jeopardy. I haven't seen one yet, so I can't say for sure.
